We invite you to join us at Wilcom’s Inn Steakhouse & Wine for one of the most exclusive wine dinners yet –an intimate evening dedicated to the extraordinary wines of Immortal Estate.
This special experience will feature four wines paired with six chef-crafted courses, created to showcase the character of each wine.
A REMARKABLE VINEYARD IN SONOMA
High in Sonoma's Mayacamas Mountains lies the dramatic vineyard behind Immortal Estate.
The vines grow along steep, terraced mountainsides at elevations ranging from approximately 1,100 to 1,700 feet. Lean soils naturally limit the vines' vigor, producing remarkable small berries with concentrated character.
Warm days combined with cooling ocean breezes allow the fruit to develop beautiful richness and texture while preserving freshness and natural acidity.
It is an extraordinary place –and the wines tell its story.

MEET CHEF PICAZO
We're excited to welcome Chef José Picazo to Wilcom's Inn Steakhouse & Wine for a short-term culinary consultation, working alongside Chef Ramón Lara and our kitchen team to share his experience, ideas, and expertise.
For our Immortal Estate Wine Dinner, Chef Picazo will take a special role in crafting the six-course menu, thoughtfully designing each course to complement the four exceptional wines of Immortal Estate.
We're thrilled to have his creativity in the kitchen for this special evening while Chef Ramón continues to lead our culinary team at Wilcom's Inn.
Rather than simply selecting wines to accompany dinner, we're approaching this evening from the opposite direction –the wines are the inspiration for the menu.
